Are there any mods to increase stack size in Valheim?
Yes. ItemStacks is the established option: its documented defaults multiply stack size by 10 and item weight by 0.1, with per-item overrides for both. Before installing it on a long-running world, read the warning below — reducing a stack size later, or loading the world without the mod, destroys items sitting above the new limit.

The details
ItemStacks changes two things at once, which is either the appeal or the problem depending on what you asked for. The stack multiplier and the weight multiplier are separate settings with their own enable flags, so you can raise stacks without lightening everything if you only wanted the slots back. Individual items can be pinned to an exact number instead of a multiplier by setting their value above zero.
The data-loss warning is the part that deserves its own paragraph. Its README states that loading a world without the mod installed, or reducing stack size afterwards, will lose any items in a stack above the new limit. That makes uninstalling it a deliberate operation: empty the oversized stacks into vanilla-sized amounts first, and back up the world and character before you touch the numbers.
One setup detail catches people out. The per-item configuration entries are generated from the game's object database, so the config file has nothing item-specific in it until you have loaded into a world once with the mod active. If you open the file expecting a full list and find it bare, that is why.
Check its age against your version. ItemStacks was last updated in 2021, and while it remains widely downloaded, several major Valheim updates have shipped since. Test it on a disposable profile before entrusting a long save to it, and treat the last-updated date as the number that matters here rather than the download count.
DropMoreLoot is a reasonable alternative when stacking is not really the whole request. It bundles item stacking with a configurable weight multiplier, drop multipliers for resources, monsters and pickables, floating loot, and a pickup radius. It is maintained more recently, but it changes drop rates as well, so pick it when you want the whole bundle rather than as a drop-in for stack size alone.
